iTunes and ipod

wii just got my new ipod video
but im not very good in putting stuff on it.. :s i guess...
the My pictures map is on my ipod so all the pictures are on my ipod but i dont want ALL the pictures only a few.. (i have like to many hitler pics and stupid gifs and stuff.. :p)
when i go to the fotolibrary on my ipod i cant delete any fotos on my ipod or am i doing something wrong.. :s
and in itunes i cant find a foto option?
