i used to really enjoy playing Geoff Crammond's Grand Prix 2 and Grand Prix Manager 2, is anyone able to recommend some good similar games of today, both racing and managing?

The new F1 game on the PS3 is very very good. The carrier mode is challenging and really in depth.

Get the Logitech force feedback wheel. Got one for my PS2 and they are very very good.
