in game there is anti-lag, so my crosshair would have been on him.

but in demo you see what ACTUALLY happens, so in real terms my crosshair was 1/3 of a second behind his player model

isn't antilag calculated serverside ? and if so, how can the client then disregard that info when writing the demo ?

Whatever kad says, demos recorded with high ping make it look like the player was aiming a lot behind the enemy, while on his screen (while playing) he aimed at the enemy.
