Steve Vai certainly can play faster than in the movie i linked to, but imo melody > speed, and to be fair i don't know many other guitarists than Luca Turilli who combines speed and melody in every solo. Shredding is not my type of guitar playing :)

Mark Knopfler has an excellent sense in his fingers , Eric clapton might be the best acoustic player, yngwie Malmsteen is one of the most technical guitarrists that I know of ..
if u just look at a single solo I should think that the solo of Sweet child o mine is in the top, actually i just recently got that , had to work for 6 hours straight to actually set it, and since the most ppl have been trying to play just that solo it might be the winner here. :p, but Actually Yngwie pwns slash in clean tecniqe , and yet i havent talked about maybe the best guitarrist: mr Joe Satriani , he has both tecniqe and feeling in his fingers ... really hard to say exactly what solo is the best. :p
All I know is that this guy is probably the best guitar player in the world :P
