the harvard and von neumann architectures refer to how CPU's work, more exactly on where are the instructions stored relative to the data
the turing machine is something theoretical, abstract, and with implications in mathematics. i'm not really that into computer science theory to know more about this one :< i do know details about the harvard and von neumann architectures, they're way more practical
