I guess they seperate the yellow and white part, when it's a normal egg. After it they cook the yellow shit. Put it in a pan, spill the white shit around and cook it again.
I heard that's quite normal also in europe for restaurants and so on. To always have the same size, it doesn't take so much time and easier to transport.
