what programs are easy to use to visually put something like this together, any ' good ' sites informing on this topic are welcome

Microsoft Visio. You can download a 60 days test version from M$
outch.. i understood it like "i need a program that draws the network (with all the infos.. ips..subnets )" X:

Idd vision is the best program to do that....

I guess it depends on what you need. If you need a 'real' plan, go for some free CAD software. SmartDraw was the first to come out from Google.

If you just need fancy visualization, you could try Google Sketchup. It's pretty easy to use and one can make basic 3D stuff quickly.

And, like cuttyP mentioned, MS Visio is actually pretty good for flowcharts.
