mission: make spaghetti

Hi crossfire,

my parents asked me to make spaghetti for the whole family. I'm United Kingdomtyyrd of just cooking the meat and pouring a bowl of premade sauce so i want to make some well flavored spaghetti.

(for example: use peeled tomatoes, ketchup, paprika, carrots,..)

what could i use to get the flavor YUMMY?

you make some spaghetti alla carbonara, its the best.

Pasta with 200 gram Chicken and 250 gram Vegetables // My meal @ Night :)
make tomato sauce where u put meat, some onions, green pepper and olives. put all those together and put it on the spaghetti. and on top some cheese. really tasty and easy to make :)
Make spaghetti with a salmon sauce instead of meat.
i dislike fish :(

onions, tomatoes, mushrooms, makaroni, cream, grindmeat or bacon or whatever

prepare the meat
take the meat off, prepare onion
mix meat with the onion, add mushrooms and spices, pepper, salt, white pepper, basilika
add makaroni
add cream
let the extra humidity disappear by keeping it on mid temperature.
mix it around, wait till the cream gets bit more solid.

optionally you could add image: 250px-Courgette

it gets soft and soaks the cream nicely. brings lots of taste.

serve with parmezan and maybe salad & cucumber

the sauce is finished? you mix them all together, cream brings taste to makaroni.

edit: and no, its not sugo. its my own recipe, could be that its old recipe but I didnt look it from anywhere.

hmmz cooking the meat first is a big no-no, you need your meat to stay moist imo.

the way i did it now:

- prepare onions, tomatoes, paprika's, courgettes (Cucurbita pepo) & carrots with the blender (oh yeh, i love my blender)
- make a stew with a little olive oil
- add peeled tomatoes (juicy) and mashed tomatoes
- prepare the meat
- put together & add spices (added some basilicum, rosemary and spaghetti spices(which include salt & pepper))
- cook spaghetti


et voila, family said it was really tasty

depends on the meat. grindmeat you do after onions, bacon before. you get the grease out of bacon which you can use for onions etc and you dont need to add oil.

My father's recipe (from memory, so I may get some stuff wrong):

Ingredients for the sauce: bacon, mince (grindmeat, I guess you call it), tin of chopped tomatoes, tomato concentrate, one clove of garlic, one onion, one beef stock cube, a large glass of red wine, fresh bay leaves, some form of fresh herb (ideally oregano imo).

In a large saucepan, fry the bacon until it just starts to crisp (if the bacon has a decent amount of fat you won't need to add any oil to the pan), then add the chopped onion; once onion softens add the garlic and then the mince. Crumble the beef stock cube directly onto the mince (don't dilute it to make stock) and continue to fry until the mince is browned.

Add a large squeeze of tomato concentrate and stir in, then add the tin of tomatoes and red wine. Add bay leaves and herbs, stir, then leave to simmer for an hour, topping up with tinned tomatoes and red wine as needed. Season to taste with salt, pepper or anything else you want.

Boil some pasta (add a dash of olive oil to the water), then serve with the sauce. Top with fresh grated parmesan and fresh parsley or basil.

I recommend cooking a huge vat of the pasta sauce and freezing portions of it - it freezes well, is easy to cook in large quantities, and means you don't have to cook more next time you want it. Obviously you have to scale up the ingredients to do this.

Any mistakes in the above recipe may be corrected tonight, depending on whether I remember. An optional addition would be roughly chopped mushrooms after all the other ingredients but before simmering - that quite dramatically changes the flavour, but if you like mushrooms can be good.
looks like a nice recipe. i would have never thought about adding red wine and bacon.

I don't understand what one of the ingredients represents: beef stock cube? is that like a image: bouillonblok like we call it?
