Poker is a mind game, olympic games is not a place for mind games, if it would, there are way harder mind games then poker that would make a better candidate..
Yes it requires skill, like anything in this live if you want to be good, but luck factor is still big.
Lets imagine olympic poker final:
One dude goes all in with 70% to win, othe guyr goes all in with 30% to win, the dude with 30% chance wins, hooora we got an olympic gold champion...lol

Also..it goes against Olympic spirit and principles, its a gambling game, that is worth nothing witout money, if not for money, no one would play it. Also its a dirty game, where you seek how to fool your opponent..
