Planescape: Torment is the best game ever but not for everyone.
Baldur's Gate 1&2 would be the best rpgs created for a big group of gamers and not long after PS:T in game value. Even if you cant stand bad graphics you should really play BG1 first, its a fantastic game.
If you want newer games both Knights of the Old Republic 1&2 are great rpgs. Doesnt matter if you like that crap they call Star Wars or not.
Fallout 1&2 are also classics, just a bit behind BG1&2 but even more fun for those who prefer a dark futuristic reality over magic and the middle ages.
Icewind Dale 1&2 are OK hack'n'slash games but not much more.
Sacred is great game to run around and kill stuff in even if Diablo 2 might be even more fun. Titan Quest is also an OK hack'n'slash.
If you want something different Elder Scrolls 3: Morrowind is fantastic. Its big and free enough to keep you busy for months. However its not for everyone but with the expansions and some of the fantastic mods that have been developed over the years its really great if you stick with it for a while.
